Stir fried Organic Chicken – Thai Style
Ingredients
A lovely big handful of fresh coriander (chopped)
Instructions:
- 4, Skinless Organic Chicken Breasts
- 2, Limes - Grated zest and juice of
- 10, Fluid oz (150ml) tinned coconut milk
- 1, Tablespoon olive oil
- 2, Green chilies de-sseded and chopped
- 2, Dessert spoons of Thai fish sauce
- 8, Spring Onions cut into slices
A lovely big handful of fresh coriander (chopped)
Instructions:
- Cut Organic Chicken into bite sized pieces, place in a bowl with lime juice and zest, stir well and leave to marinade for one hour.
- Heat oil in a pan, add chicken and stir fry for 5-6 minutes.
- Add the chilies and stir fry for another minutes
- Add the coconut milk, fish sauce, 2/3 of the coriander and spring onions and simmer for another 3-4 minutes.
- Place in a warm bowl, sprinkle with the remaining coriander and serve with lovely light Thai rice.
